Servings 4

  • Ingredients serves 4 as a snack
  • For the Potato Bites
  • 4 medium sized new potatoes about 60g each
  • 1-2 tbsp Vegetable oil
  • For the Raita
  • 2 tbsp Plain yoghurt
  • 3 cm Cucumber
  • 1/8 tsp Salt
  • 1/8 tsp Black pepper
  • 1/8 tsp Ground cumin
  • 1/8 tsp Ground coriander
  • For the Onion Salad
  • ¼ mild white onion
  • 2 Cherry tomatoes
  • 1 tbsp Fresh coriander
  • To serve: Gunpowder Hot Garlic Pickle

  • Preheat the oven to 200C/ 400F/ GM6
  • Thinly slice the potatoes (aim for 2-3mm circles), place on a large roasting tin lined with parchment, drizzle the oil over them and lightly season with salt and pepper. Toss briefly to coat everything then spread into a single layer and cook for 30 minutes, turning midway
  • When the time is up check that the potato bites are cooked through by poking a few with a sharp knife. They should feel soft. If the potatoes feel woody, then continue to cook for a few more minutes until soft
  • While the potatoes cook make the raita and onion salad:
  • Finely chop the cucumber and mix into the yoghurt with the rest of the raita ingredients
  • Chop the tomatoes in half, remove the seeds and chop finely. Slice the onion as thinly as possible then chop the coriander. Mix all ingredients together
  • When the bites are cooked each one should be topped with a little raita, onion salad and some Gunpowder Hot Garlic Pickle
  • Serving Suggestion
  • Either pre-assemble the bites and hand them around or pile the potatoes onto a warmed serving plate with the raita, onion salad and Gunpowder pickle served in bowls alongside for diners to help themselves to

Expert Tips
• Once cooked these potato bites cool down quickly so make sure the toppings are ready before taking them out of the oven
• These bites are best served warm, but they are still delicious at room temperature
• This is a great make-ahead dish. The potatoes can be reheated when ready to serve and the toppings can be made in advance and refrigerated until required
• Ring the changes by using sweet potato in place of new potatoes
• Try some of our Lust Mango & Ginger Chutney in place of the Gunpowder Hot Garlic Pickle.
